This roasted rainbow carrots form lives up to its name. Seriously, how frequently do you see white, unheroic, orange, grandiloquent, pink, and green all hanging out in a single dish?! Always, but especially throughout the fall and downtime, I aim to add as important color to my refections as I can. These rainbow carrots make it easy!
My favorite thing about this form( away from all the colors) is that it uses the carrot tops as well as the carrots themselves. While the roots repast, getting tender and caramelized in the roaster, I use the covers to make a quick “ gremolata ” with parsley, orange tang, cumin, and garlic. Sprinkled over the roasted rainbow carrots just before serving, the gremolata adds fresh, citrusy zing to the final dish. I eclipse it off with mizzles of delicate tahini sauce and pomegranate seeds for a bright, juicy pop.
The pomegranates and orange zest give this form a gleeful faculty, so it would be a perfect vacation side dish. That being said, it’s enough straightforward, so if you be to have some rainbow carrots in your fridge on a regular weeknight, there’s no reason you should n’t go for it. Rainbow carrots, of course! Or regular orange carrots, if they ’re all you can find at your growers request or grocery store. The kinds look different, but they've nearly identical tastes and textures.
Extra virgin olive oil painting – It helps the carrots soften and brown in the roaster.
Carrot covers and fresh parsley – They add refreshing, grassy flavor to the carrot top gremolata. Can’t find a bunch of carrots with covers? That’s ok! Use redundant parsley rather.
Garlic – It gives the gremolata a savory bite.
Orange tang – It adds lovely citrusy notes to the gremolata.
Heated cumin seeds – Their earthy flavor dyads beautifully with the roasted rainbow carrots.
Tahini sauce – It offers a rich and delicate discrepancy to all the fresh veggies.
